Qualiti  flour  baker’s 2 is distinguished by a variety of useful substances due to the larger size of the particles. Despite the fact that the products made of such flour do not differ in whiteness typical for the products made from the high-grade and first-grade flour, they contain more protein, vitamins, mineral compounds and are characterized by the good taste and pleasant bread aroma. The flour consists of the crushed hulls in an amount of 8-12% of the total flour weight. The second-grade flour particles are larger in comparison with the first-grade flour. The second-grade wheat flour has the best baking qualities. The pastry made of the second-grade flouris fluffy and with porous crumb. It is recommended for mixing with the rye flour when baking the rye bread. The bread made of the second-grade flour is actively used in the therapeutic and dietary nutrition, it is often combined with the rye flour that is not less useful, therefore such products are considered very useful for health.
